Salvadoran Pupusas

Pupusas are the best known and consumed typical dish of El Salvador and are also known internationally. It is common that when tourists or foreigners visit El Salvador, they do not leave without first having tried pupusas.

Recipe for pupusas

To prepare pupusas, a dough is first needed, which in El Salvador is usually made from ground corn; although you can also use ground rice. If you wish you can also use cornmeal or rice flour.

They are basically an omelette, but the difference is that other ingredients are added inside that give it a unique flavor. These ingredients are usually the following and vary according to the type of pupusa to be made:

  • Pupusas scrambled: Grilled cheese, fried ground beans, ground pork rinds.
  • Pupusas of cheese: Cheese chewed.
  • Bean and cheese pupusas: Chicory cheese and fried ground beans.
  • Pupmkin pupusa: Striped pumpkin (known in other places as zucchini) and chicory cheese.
  • Chicken Pupusa: Ground chicken meat and chicory cheese.
  • Pork and cheese pupusa: Ground pork rind and chicory cheese.
  • Bean pupusa with pork rinds: Fried ground beans and ground pork rinds.
  • Pupusa loca(crazy pupusa): Includes all or most of the ingredients mentioned above.

How to make pupusas?

  • First you need to clean the iron with a little oil or butter, to prevent the pupusas from sticking.
  • Then you must prepare the flour, which is stirred with hot water to form the dough.
  • It takes a little dough and is beaten with the palm of the hand until it forms an omelet. Place it in the palm of your hand and in the center add the ingredients mentioned above. This is the most difficult step in which the dough should be closed and the ingredients should remain inside. With practice, the technique is perfected.
  • Then it is thrown on the plate to cook for a maximum time of 5 minutes.
  • And ready to serve and eat hot.

Preparing sauce and pickle

Undoubtedly pupusas must be accompanied by tomato sauce and pickle, to accentuate its flavor.

To prepare the tan, cabbage is needed, which is chopped with a knife or scratched with a scratcher; Optionally carrot, onion, cauliflower, jalapeno pepper are added. All these ingredients are joined, passed over hot water and vinegar is added.

To make the pupusas sauce you need tomatoes, onion, garlic and a little spice. These ingredients are ground or liquefied to make a sauce to which a little water is added and sewn until boiled.
